Cucumber Lemonade Mocktail

Diving back into my mocktail series, you all seemed to love the recipes, so I’m keeping them coming! The great part about these is that they include everyone, excluding no one because you can easily swap the non-alcoholic spirit for your preferred spirit! Today I’m sharing a light and refreshing cucumber lemonade mocktail that is not too sweet! Of course, you can adjust the sweetness and add vodka or gin if you’d rather make it a cocktail. This recipe was inspired by Food & Wine’s recipe. Let’s jump in!

 
 

What you need

  • 1 paper-thin lengthwise slice of European cucumber, for garnish

  • 1 circular cucumber slice, for garnish

  • Ice

  • 1/4 teaspoon finely chopped dill, plus 1 dill sprig, for garnish

  • 1 tablespoon agave syrup

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon fresh lime juice

  • 1/4 cup fresh cucumber juice (I used the Nutribullet to pure and the strainer to drain the juice)

  • 1/4 cup chilled sparking water

  • Cocktail shaker

Instructions

Step 1: Add the cucumber garnish
Press the paper-thin cucumber slice against the inside of a chilled highball glass and add ice.

Step 2: Add ingredients to shaker
In a cocktail shaker, muddle the chopped dill, agave syrup, lemon and lime juices, and 1 tablespoon of water until the syrup is dissolved. Add ice, then add the fresh cucumber juice and shake well.

Step 3: Strain into glass
Pour from shaker into your prepared glass and stir in the sparkling water.

Step 4: Garnish and enjoy
Garnish with circular cucumber slice and dill sprig. Enjoy!
